Delicious gluten-free, grain-free coconut cookies


1 ¼ cup almond flour/meal
2 Tbsp maple syrups
¼ cup grapeseed oil
1 tsp vanilla extract
¼ tsp sea salt
¼ tsp baking soda
½ cup walnuts, toasted and chopped
½ cup freshly grated coconut*
¼ cup raisins
  1. In a large bowl, combine oil, maple syrup and vanilla.
  2. In a medium bowl, combine almond flour salt, baking soda, walnuts, coconut and raisins.
  3. Stir dry ingredients into wet, mixing thoroughly.
  4. Form dough into 1-inch balls and flatten onto a greased baking sheet.
  5. Bake at 350° for 8-10 minutes, until golden brown around the edges.
  6. Cool and serve.
  7. Makes approximately 16 cookies.

*: can use dried, unsweetened, shredded coconut, but the cookies will be more brittle.
