Vegan Power Bars

Serves: 20 bars
  1. Place almonds, flax meal, shredded coconut, almond butter, and salt in a food processor
  2. Pulse briefly, about 10 seconds
  3. Add coconut oil, stevia, honey, and vanilla to dry ingredients
  4. Pulse until mixture forms a coarse paste
  5. Press mixture into an 8 x 8 inch baking dish
  6. Chill in refrigerator 1 hour, until mixture hardens
  7. In a saucepan, melt chocolate over very low heat, stirring continuously
  8. Spread melted chocolate over bars
  9. Refrigerate 30 minutes, until chocolate hardens
  10. Serve
  11. Store in refrigerator for up to 1 week
